Crab Cakes

Ingredients

1 1/2 C Panko Bread Crumbs
1 C Mayonnaise
2 T chopped Parsley
1 T chopped Chives
1 T lemon juice
2 tsp Dijon mustard
1/8 tsp pepper
2 drops red pepper sauce (optional)
2 egg yolks
11 oz crab meat (or what ever you can muster up)
1 C Panko Bread Crumbs
2 T melted butter
1 1/2 tsp seafood seasoning (optional)

Preparation

  1. Preheat oven to 425 degrees F
  2. Mix 1 1/2 C Panko, mayonnaise, parsley, chives, lemon juice, mustard, pepper, egg yolks, pepper sauce (opt), egg yolks.
  3. Gently fold in crab meat with rubber spatula and try to keep pieces large.
  4. Shape into patties (1/4 cup at a time). 2 1/2" diameter (or what ever you like)
  5. Mix Panko, melted butter and optional seafood seasoning in a bowl.
  6. Coat crab patties in panko mixture
  7. place on ungreased cookie sheets.
  8. Put in the oven to bake
  9. Turn patties after 6 minutes
  10. Back for a total of 12 to 15 minutes.
